SPT: 28 ounces.

My husband decided last year that we should try our luck at making our own maple syrup from the sap of the ten or so Maple syrup trees we have at Acorn Cottage. So we purchased the buckets, taps, and lids we needed and got to work a month ago on realizing this family project. We collected 12 gallons of sap and went to work this last weekend boiling the sap out doors.

The steam from the sap is so intense that it would overwhelm the indoors and leave a sugary residue all over. Craig started the fire around 8:30 a.m. and it took all day to boil the 12 gallons of sap into a small pot sized amount. As soon the sap boiled to 218.6F the sap made the transition to actual Maple Syrup.
