We are now in operation "come home daddy" mode. He had to leave for twelve days to England and France! He hates to leave but that's the business with his job. To make the transition easier for them, Craig made a calendar with pictures listing the days he would be gone, where, and when he would return. We also have video conferencing that allows us to see each other. This is so helpful for all of us. We feel very comforted when we see his face. After each call, we put stickers on the chart. They also get a treat from me everyday at 6:30 p.m. and after 12 treats - daddy's home.
I've planned a pretty busy week, more for me, than girls. We made butter and sugar crepes - just like you get in Paris! They are really good and a good thing to make with the kids. Here's the easy recipe:
2 eggs
1 1/2 cup milk
1 cup flower
1 T. cooking oil (I used canola)
Mix everything together and away you go!
(Makes 4 thick crepes - double/triple recipe with larger families)
I used an electric skillet at 350 degrees (we only own one pan!) and poured 1/2 to 3/4 cup of the mix into the pan. You can use the bottom of the measuring cup to smooth out the mix. In a pan, you can tilt it in a circle to let the batter spread through the pan. Flip after a couple minutes.
These are not thin crepes - they are nice and thick and very easy to turn. Serve them by spreading butter and sugar, fold, butter and sugar, fold (to a quarter) and put more butter and sugar - as much as you'd like! I like it with just butter and sugar - but you can drizzle chocolate syrup, put fruit inside, powered sugar - it's up to you!
I like to eat my crepes with milk. Have you seen milk in a bag before? In Quebec, they package their milk in bags instead of cartons and gallons. It blew my mind when I first arrived here-it still does - but I need to move-on!

As for recipes for one, I have a bunch. Everyday Food (which I subscribe to even though I don't EVER cook) publishes one such recipe a month. I'll go home and scan a bunch for you. I think they're pretty easy and they always look delicious.
That milk in a bag just looks wrong...very very wrong...

1 bowl
2 C. cereal, any kind will do
3/4 C. Milk. 1% is great, but if he's gone for more than a week, splurge and use whole milk.
ps those "bags" of milk are weird!

I like that YOU eat Crepes while HE is in Paris. Fun. I hope the time goes by fast.
As for meal ideas...I'd probably just eat whatever the girls are eating because it would be easy. Either that or I'd make soup and eat it all week. Usually when Paul is gone I take it as my opportunity to not have to cook.
I know what you mean about milk in a bag. It comes that way in Peru as well. However, the most common form in Peru is in a cardboard box sitting on a shelf next to the bread...yup, not refrigerated. It kind of makes me wonder what kind of preservatives we are taking in!
When my husband is away I get a lot of frozen things like egg rolls, chicken strips and etc, and eat that. Omelettes are easy to make for one person, as well as waffles, pancakes, or other breakfast foods.
Or you can just make meals as you would, and freeze the other half for later, or save it for your lunch the next day.
Baked potato, fritatta, a calzone or small pizza...the possibilities are endless...but it doesn't help when you don't feel like cooking.
