
OK, I'm shocked that only 3 wonderful bloggers have entered this contest. Is it that you don't want a crochet pumpkin? Or, you don't have time? Either way, I am back from Acorn Cottage with lots of pictures I'll be posting tomorrow (Tuesday). For now if you visit this post, I am changing this contest slightly to open it up to more people - those who may not have a favorite pumpkin recipe. I am very sad not to enter. It was a hetic weekend, and on a whim, we are headed to California tomorrow morning for a week! Fun times, but having to take a break from blogging. No internet access at my MIL in CA! :(

I just didn't have a pumpkin recipe! But when it's cold, I'm afraid all I do is wrap up in a blanket and ask Paul to concoct some kind of 'comfort dish'! But I'll have a think...
I swear to you that I did post a pumpkin recipe! It was for pumpkin chocolate chip cookies... hummmm wonder where it went? It was when there wasn't a single comment.....
Pumpkin Chocolate Chip Cookies
2 cups brown sugar 2 cups pumpkin
1 cup oil 2 teaspoons vanilla
4 cups flour 2 teaspoons soda and baking powder
1 teaspoon each: salt, cinnamon and nutmeg
1/2 teaspoon ginger
package chocolate chips
Beat together sugar, pumpkin, oil and vanilla. Combine dry ingredients. Add and mix until smooth. Add Chocolate chips. Drop on a lightly greased baking sheet. Bake ast 335 for 12-15 mins makes about 7 dozen

Carlo's Pumpkin Cookies!
2 C. shortening (I use ½ margarine & ½ Crisco or all margarine)
2 C. sugar
1 – 16 oz. can pumpkin
2 eggs
2 t. vanilla
4 C. flour
2 t. baking powder
2 t. cinnamon
1 t. soda
1 t. nutmeg
1 t. pumpkin pie spice
1 t. salt
Cream shortening and sugar. Add pumpkin, eggs and vanilla; beat well. Stir together flour and remaining ingredients. Mix flour mixture with creamed mixture until well blended. Drop rounded teaspoonfuls 2” apart on greased cookie sheet. Bake at 350ยบ for 12-15 minutes. .
Buttercream Frosting
½ C. butter or margarine
3 C. powdered sugar
¼ C. milk or cream
1 t. vanilla
Cream butter. Add remaining ingredients and continue creaming until mixture is well blended and light and fluffy. ENJOY!
